We found some cool pickle juice salad dressings at sinfulnutrition.com and played with them until we got our own mix. If you want a creamier dressing, add another avocado.
Take it from us — make sure your avocado is pretty ripe, as a harder avocado won’t blend as well.

- 1 1/2 cups Pittsburgh Pickle Brine
- 1 Ripe avocado
- 1/4 cup Extra virgin olive oil

Instructions
- Grab your food processor, chop up an avocado (and take the skin off, you animal) and pour it -- and the brine -- in. Mix until smooth, then set to low. Slowly pour in the olive oil until everything is combined.
